Make the matcha mix by adding the matcha and hot water in bowl or dish and whisking to make sure it is all dissolved.
Mix the egg yolks and sugar, then add the mascarpone and double cream. Whisk until smooth and thickened (nearly forming peaks). Make the pancake batter.
Make a pancake then once cooked dunk it in the matcha mix, place it on a plate and add a tablespoon of the cream mixture. Fold up the crepe and add another scoop of the cream on top. Dust with matcha powder. Enjoy!
